As the weather warms up, it’s time to lighten up our baking! Introducing the ultimate summer treat: Lime and Coconut Cupcakes.

These delightful cupcakes are bursting with tropical flavours and are sure to be a hit at any gathering—from casual get-togethers to festive celebrations, especially during Australia’s warm Christmas parties.

A Recipe With History! This recipe has been a staple in my baking repertoire for years! During my time at market stalls, these cupcakes were always a crowd favourite.


The perfect balance of coconut’s chewy texture and zesty lime brightness creates a light and fluffy treat that’s simply irresistible. Plus, they’re delicious even with no icing and fresh from the oven!





Texture Matters with the Coconut

For these cupcakes, I prefer using shredded coconut instead of the fine desiccated type. The shredded variety adds a delightful texture that enhances the overall experience and taste of the cupcakes.


Simple Yet Elegant Decorating using Lime and Coconut!

While you could certainly get creative with colourful icing, I like to keep things simple to let the flavours shine. For my Lime and Coconut Cupcakes, I use my signature vanilla Swiss Meringue Buttercream (check out the recipe here). After the cupcakes cool, I ice them with a plain round tip, dip them in shredded coconut and finish with a slice of freshly cut lime.

Don’t worry if you can’t do all the baking and decorating in one go—these cupcakes freeze beautifully! Simply pop them into an airtight container and store them in the freezer for up to a month.
